                      COOKING INSTRUCTIONS AND MORE
                      BROWN SUGAR & BALSAMIC SAUCE WITH PECANS


                      Brown Sugar & Balsamic Sauce with Pecans
                       
                      Butter, Whole, No Salt                    ¼ c
                      Balsamic Vinegar                             2 ½ Tbsp
                      Brown Sugar                                     2Tbsp
                      Pecans, Chopped and Toasted      ¼ c
                       
                           : Using a medium sized sauce pot heat the butter over medium heat until melted.  Slowly cook just until the butter begins to brown slightly. Add the Balsamic and Brown Sugar and mix well until the sugar has dissolved. Add the Pecans. Season to taste with salt and pepper as needed.
                       
                      Recommended with our new Sweet Potato Ravioli, Pumpkin Ravioli or Sweet Potato Gnocchi
                      Great adds; Maple Syrup, Fresh Sage or Rosemary, Grilled Chicken or Shrimp



                      GARLICKY KALE OR RABE


                      Garlicky Kale or Rabe
                       
                      Kale or Broccoli Rabe, Chopped    2c
                      Garlic Cloves, Minced                      4ea
                      Extra Virgin Olive Oil                       Â¼ c
                      Sage Leaves, Torn                             4ea
                       
                           : Using a large sized sauté pan or skillet heat the oil over medium high heat. Sauté the Kale or Rabe with the garlic for 2-3 minutes stirring often. Add the sage and season to taste with salt and pepper as needed.
                       
                      Recommended with our new Sweet Potato Ravioli, Pumpkin Ravioli or Sweet Potato Gnocchi
                      Great adds; Chopped Apple Bacon, Nuts, Dried Fruits, Asiago Cheese



                      EASY ALFREDO


                      Easy Alfredo

                       

                      Heavy Cream                         2c
                      Garlic Cloves, Minced          2ea
                      Romano or Parmesan, Grated
                       
                           : Using a medium sized sauce pot heat the cream and garlic over medium heat just until simmering. Be careful not to allow the pot to bubble over the pot. Stir in small amounts of grated cheese until you achieve your desired thickness.  Season to taste with salt and pepper as needed.  Add a touch of butter for added richness.
                       
                      Great on everything!



                      PINK VODKA SAUCE


                      Pink Vodka Sauce
                      Using our wonderful Pomodoro Sauce
                       
                      Butter, Whole, No Salt     ¼ c
                      Garlic Cloves, Minced      4ea
                      Vodka                                  1c
                      Heavy Cream                     2c
                      Pomodoro Sauce               1qt
                       
                           : Using a medium sized sauce pot heat the butter over medium heat until melted.  Add the garlic and sauté for 1-2 minutes.  Remove the pot from the heat and add the vodka. Return to the heat and simmer for 3-5 minutes until the volume has reduced by half. Add the cream and bring to a simmer then add the Pomordoro sauce and return to a simmer. Season to taste with salt and pepper as needed. To thicken add small amounts of grated or shredded Parmesan or Romano cheeses.
                       
                      Recommended with our new Caprese Ravioli, Cheese Ravioli, and or Spinach Ravioli and any of our fresh Pasta, or Cheese, Roasted Garlic and Spinach or Potato gnocchi

                      SAGE CREAM SAUCE

                      Sweet Potato Ravioli and Sweet Sausage

                      Tossed in a Sage Cream Sauce


                           - Reduce 1 cup of heavy cream with 1 teaspoon of chopped

                              garlic to 1/2 cup


                           - Dash of kosher salt and black pepper


                           - Add 1 tablespoon chopped fresh sage


                           - Toss 1/2 cup of cooked sliced sweet Italian sausage in the

                               cream sauce


                           - Mix in one dozen of cooked ravioli


                           - Mix with 2 tablespoons shaved Asiago Cheese


                           - Top the dish with 1 tablespoon of shaved Asiago cheese.


                           - Enjoy!


                      SAUCE PUTANESCA


                      Sauce Putanesca

                      Using our wonderful Pomodoro Sauce

                       

                      Extra Virgin Olive Oil                         Â¼ c

                      Onion, Finely Chopped                      1c

                      Garlic Cloves, Minced                        6ea

                      Kalamata Olives, Rough Chopped   ½ c

                      Green Olives, Rough Chopped         Â½ c

                      Capers, Drained                                  2Tbsp

                      Basil, Fresh, Chopped                       1Tbsp

                      Crushed Red Pepper, Flakes            ½ tsp

                      Pomodoro Sauce                                 1qt

                       

                           : Using a medium sized sauce pot heat the oil over medium high heat. Sauté until the onions are soft and begin to brown about 5-7 minutes stirring often. Add the garlic and reduce the heat to medium and cook for an additional 2 minutes. Add the remaining ingredients and simmer for 30 minutes or until the sauce reduces slightly and has thickened, stirring frequently. Season to taste with salt and pepper as needed. Optional add would be 6-8 Anchovy filets chopped.

                       

                      Recommended with our new Caprese Ravioli, Cheese Ravioli, and or Spinach Ravioli and any of our fresh Pasta, or Cheese, Roasted Garlic and Spinach or Potato gnocchi
